SOUFFLE OMELETTE

Cooking Time :
5 minutes

Preparation Method :

  • Separate the eggs and whisk the egg whites until they stand in peaks.
  • Beat the yolks with salt and pepper to taste, add very little water if needed.
  • Fold the whisked egg white into the yolks just before cooking.
  • Heat the butter in a large frying pan.
  • Pour the eggs into the pan and cook until just set on the bottom.
  • Place the pan under a preheated moderate grill and cook until the omelette is set.
  • Cut the omelette lightly through the centre to make it easier to fold and add the filling of your choice. Fold and transfer to a warmed plate.

INGREDIENTS

  • 4 eggs
  • 50 grams butter
  • Salt and pepper, to taste
