Preparation Method :

  • Pat dry the fillets with kitchen paper and cut into thick slices. Halve the prosciutto slices.
  • Cut the bread slices into quarters or pieces just a little larger than the pork.
  • Thread the skewers first with a piece of bread, then a piece of the prosciutto folded over to the same size, then a pork slice.
  • Repeat sequence twice, ending with a piece of bread. Repeat with remaining ingredients to make 8 skewers.
  • Brush skewers with a little oil and season to taste with black pepper and rosemary leaves.
  • Cook over a preheated hot barbecue or under a grill for about 10 minutes, until meat is cooked through and bread is crisp and golden. Serve hot with salad.


  • 5 tablespoon olive oil
  • 2 large pork fillets
  • 12 thin slices prosciutto or pancetta
  • 8 thick slices Italian bread
  • Freshly ground black pepper
  • Bruised fresh rosemary leaves
