DEEP SEA LIGHTNING SALAD

Preparation Method :

  • Blanch potatoes in salted boiling water for 10 - 15 minutes or until tender but not falling apart or mashy. Cut in half.
  • Preheat a grill pan over medium heat until very hot. Brush each tuna steak with 2 teaspoons of the oil and season both sides to taste with salt and pepper.
  • Grill 2 minutes for rare, 3½ minutes for medium, and 5 minutes for well done, turn once. Remove fish and set aside, loosely covered.
  • Brush the potatoes with remaining 1 teaspoon of oil. Grill for another 2-3 minutes, turning with tongs to char lightly but evenly.
  • In a glass or nonreactive metal bowl, toss the greens with about half the vinaigrette. Add avocado, tomato, olives, and potatoes and toss gently.
  • For each serving, place 1 tuna steak on a large plate and drizzle with a little vinaigrette.
  • Surround the tuna with the salad, divide all the ingredients evenly. Scatter the capers over each salad and drape the anchovies over the top.

INGREDIENTS

  • 4 golf ball-sized new potatoes
  • 175 grams tuna steaks
  • 6 teaspoons light olive oil
  • ¼ teaspoon salt    
  • ¼ teaspoon freshly ground pepper
  • 450 grams mesclun or mixed baby lettuce leaves
  • 50 grams Basil Vinaigrette  
  • 1 Haas avocado, peeled and thinly sliced 
  • 1 medium tomato, cored and cut into quarters 
  • 1 tablespoon Nicoise olives 
  • 1 tablespoon capers, drained  
  • 50 grams can anchovy fillets
