Preparation Method :

  • Combine the lime zest, lime juice, ginger, and honey in a small glass or non- reactive metal bowl.
  • Stir together to make a paste. Rub the paste on the sea bass and let it sit, loosely covered, for 30 minutes.
  • Season the sea bass with salt and pepper and set aside.
  • Rinse leeks well in a sifter and separate them into individual rings. Dry the leeks thoroughly and toss them with the olive oil.
  • Preheat a grill pan over medium heat until very hot. Add the sea bass and the leeks at the same time, on opposite sides of the pan.
  • Toss the leeks frequently using the tongs. Cook the sea bass until nicely browned, about 5-6 minutes. Turn and cook for another 5 more minutes.
  • Transfer the fish to two warm platter and top with the leeks. Serve immediately.


  • 175 grams sea bass fillets
  • 2 tablespoons grated lime zest
  • 60 ml fresh Key lime juice
  • 2 teaspoons finely grated fresh ginger
  • 1 tablespoon honey
  • 2 medium leeks, (white and light green parts only, thinly sliced)
  • 1 tablespoon light olive oil
  • Freshly ground pepper and Salt
