BROCCOLI GRILL (BROIL)

Preparation Method :

  • Use 15 grams/1/2 oz (1 tablespoon) of the butter to grease a shallow ovenproof dish. Cook the broccoli in boiling, salted water for 5 to 8 minutes. Drain and arrange in the dish.
  • To make the sauce, melt the remaining butter in a pan, stir in the flour and cook for 1 minute.
  • Remove from the heat and gradually blend in the milk.
  • Cook the sauce, stirring, until it thickens. Stir in the grated cheese, mustard and salt and pepper to taste.
  • Pour the sauce over the broccoli, arrange the tomatoes around the edge and sprinkle with breadcrumbs. Cook under a preheated moderate grill (broiler) for 10 minutes until the top is golden and bubbling.
  • Serve with whole wheat bread.

INGREDIENTS

  • 80 grams butter
  • 700 grams fresh or frozen broccoli
  • Salt and freshly ground pepper
  • 50 grams plain flour
  • 600 ml milk
  • 150 grams mature cheese, grated
  • 1 teaspoon made mustard
  • 4 tomatoes, quartered
  • 50 grams dry breadcrumbs
