EGGPLANT PARMESAN

This eggplant parmesan is one of the best options for healthy diet. It mainly consists of palatable ingredients like eggplant, dried oregano, tomato sauce and other perfect seasonings that add to its taste. With its Parmesan cheese, the dish becomes more delicious and enticing.

1 hour 10 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Cut the eggplant into ¼ inch-thick slices. Arrange the slices in a single laver on paper towels.
  • Sprinkle the eggplant with half of the salt and let stand for 1 hour. In a small bowl, combine the dried herbs, pepper, and remaining salt.
  • Preheat a grill pan over medium heat until very hot. Pat the eggplant dry with paper towels and transfer to a cutting board.
  • Brush one side of the eggplant with oil and season with half of the herb mixture. Transfer to the hot grill pan seasoned side down.
  • Brush the other side with oil and season with the remaining herb mixture. Cook for at least 5 minutes and turn.
  • Spoon about 1 teaspoon of the tomato sauce onto each slice of eggplant and top with the cheeses.
  • Cook for an additional 2-3 minutes, or until the cheese has almost melted. Serve immediately.

INGREDIENTS

  • 1 medium eggplant, about 1 ½ pounds,( top trimmed)
  • 1 teaspoon salt
  • 1 teaspoon dried oregano, crumbled
  • 1 teaspoon dried basil, crumbled
  • ¼ teaspoon freshly ground pepper
  • 100 ml IDHAYAM sesame oil
  • 120 grams fresh or prepared tomato sauce
  • 200 grams shredded mozzarella cheese
  • 50 grams grated Parmesan cheese
