Preparation Method :

  • Soak 8 wooden skewers in water to cover for 30 minutes. Set aside.
  • Build a hot charcoal or wood fire in a barbecue or preheat a gas barbecue to 200°C (400°F). In a bowl, combine courgette slices with oil, oregano, coriander, chilli powder, and 1 teaspoon salt. Turn to coat and let stand for 30 minutes.
  • Thread courgettes sideways onto skewers. Grill 5 minutes on one side, or until lightly browned, then turn and cook other side until lightly browned and tender, 5 minutes. Brush with more marinade if desired.
  • In a bowl, mix together yoghurt, cumin, cayenne pepper, and salt.
  • Serve skewers with yoghurt alongside, garnished with a few fresh coriander sprigs. 


  • 6 courgettes cut crossways into slices
  • 4 Tablespoon sesame oil
  • 2 teaspoon dried oregano
  • 2 teaspoon coriander seeds, crushed
  • 1 teaspoon mild chilli powder
  • 300 ml whole or low-fat natural yoghurt
  • 2 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • Fresh coriander sprigs for garnish
