Preparation Method :

  • Mix the Onions, Red chillies, Green chillies, White sesame seeds, Dry coconut, Jaggery, Tamarind, Ginger, Garlic, Jeera, Roasted peanuts, Garam masala, Turmeric, Curry leaves, Coriander leaves and salt.   
  • Grind the above in a mixie.
  • Slit the brinjals in the middle into 4 halves but not completely so that it will be easy to stuff the masala.
  • Stuff the brinjals with the ground mixture and keep aside.
  • Heat a non stick pan and arrange all the stuffed brinjals in the pan and then add a cup of oil and the remaining masala mix.
  • Slightly stir it and add 3/4th cup water so that the masala does not stick to the pan and cover the lid and Cook for 15 minutes.
  • When oil comes to the surface remove from flame and serve.


  • 250 grams Small round brinjals 
  • 2 medium sized Onions 
  • 5 Red chillies 
  • 4 Green chillies 
  • 1 teaspoon White sesame seeds 
  • 1 teaspoon Dry coconut powdered 
  • 1 teaspoon Jaggery powdered 
  • 1 Amla sized Tamarind 
  • ½ inch Ginger 
  • 5 cloves Garlic 
  • ½ teaspoon Jeera 
  • 2 teaspoon Roasted peanuts 
  • 1 teaspoon Garam masala 
  • ¼ teaspoon Turmeric 
  • 10 Curry leaves
  • 2 teaspoon Coriander leaves 
  • Salt to taste
  • 200 ml Sesame Oil
