Preparation Method :

  • Lightly whisk egg yolks in a bowl. Gently heat milk in a small saucepan over medium heat and pour over the eggs. Stir well to combine, then set aside.
  • Place sugar with 25 ml of cold water in a saucepan over low heat and stir to dissolve sugar.
  • Increase heat to medium and cook until mixture begins to turn a rich golden colour.
  • Add caramel and cook for a few seconds. Gently pour in the cream. Reduce heat to low and stir to melt the lumps.
  • When smooth, stir in the egg mixture. Continue to cook, stirring constantly, until the mixture thickens. Pour into a shallow container and freeze until half set.
  • 06Remove from freezer and whisk gently. Pour back into the container and refreeze. Repeat 2 or 3 times.


  • 50 grams castor sugar
  • 25 grams sugar for caramel
  • 150 ml cream
  • 350 ml milk
  • 3 egg yolks
