CHOCOLATE ICE CREAM WITH RUM AND RAISINS

Serves :

Preparation Time :
45 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Separate the eggs and add 7 tablespoon sugar to the egg yolks and beat. 
  • Mix 2 tablespoon milk with the cocoa powder and add to the beaten yolks and the remaining milk.
  • Heat and cook the milk mixture on a medium flame till it coats the back of a spoon , make sure it should not curdle and cool.
  • Beat egg whites stiff and keep aside.
  • Beat the cream till thick and add to the cooled milk mixture along with the rum.
  • Pour the mixture into ice trays and freeze till half set. Remove and beat with a whisk.
  • Add walnuts and raisins and put back in the trays and freeze till fully set.

INGREDIENTS

  • 150 grams / 6 oz / 1 cup caster sugar
  • 75 grams / 3 oz / 5 tablespoon cocoa powder
  • 150 ml / 6 oz / 1½ cups milk
  • 50 grams / 2 oz / 3 tablespoon raisins, Rinsed, Dried and Chopped
  • 25 grams / 1 oz / 2 tablespoon grated walnuts
  • 150 ml / 6 oz / 1½ cups cream
  • 25 ml / 1 oz / 2 tablespoon rum
  • 2 eggs
