Preparation Method :

  • Mix the egg yolks, sugar and custard powder with the remaining ½ cup of cold milk to a smooth cream.
  • Heat 3½ cups of milk. Then stir in the custard mixture.
  • Return custard to the pan and gradually bring to a boil, stirring all the time until it has thickened.
  • Remove from heat and add vanilla essence.
  • Cover top of pan with a wet cloth to prevent a layer from forming. Allow to stand for about 20 minutes.
  • Whisk the egg whites till stiff. Fold in the cream and then the egg whites into the cold custard. Mix well.
  • Pour into the freezer trays and when half set. Remove and beat till smooth.
  • Return to ice trays, cover and freeze once again. Serve with cut fruit.


  • Chopped fresh fruit
  • 750 ml milk
  • 1 tablespoon custard powder
  • 3 tablespoon sugar
  • 2 large eggs, separated
  • 1 teaspoon vanilla essence
  • 150 ml cream
