Preparation Method :
- In a double boiler, add in the thick cream, castor sugar and grated orange rind and cook over simmering water till sugar is dissolved. Remove and cool.
- Add juice of oranges to cooled cream and mix well.
- Fold into whipped cream.
- Put in ice cream container and freeze for about an hour or till its half frozen. Remove and whip it well.
- Fold it back in the ice cream container, cover and freeze till it is completely set. 15 - 20 minutes before serving, remove from the freezer to soften.
- Scoop out into a large dish and serve.

- 220 ml thick cream
- 75 grams caster sugar
- 2 teaspoon grated orange rind
- 220 ml cream, whipped to soft peaks
