Preparation Method :

  • Wash and hull strawberries.
  • Puree the fruit and then sieve. Mix with lemon juice and chill in fridge.
  • Boil sugar with water in a saucepan.Stirring continuously, cook until sugar is dissolved. Cool and chill.
  • Combine fruit puree and sugar syrup and pour into ice-cube trays and freeze until half set.
  • Turn into a chilled bowl and beat until light and thick. Whip 2 egg whites until peaks form and blend into the fruit mixture.
  • Return to the trays, cover with foil or cling-film and freeze until firm.


  • 1 kg ripe, fresh strawberries (plums, peaches, apricots)
  • 350 grams sugar
  • 100 ml water
  • Juice of 1 lemon
  • 2 egg whites
