Preparation Method :

  • Leave the ice cream at room temperature for 40 minutes to soften, then transfer to a bowl. Add the ground ginger and beat well. Return to the carton and freeze for 4 hours.
  • Meanwhile, to make the sauce, put the raisins and dates in a heatproof bowl, pour over the boiling water and leave to soak for 20 minutes.
  • Transfer to a blender or food processor, add the tamarind and sugar and blend to a smooth puree. Transfer to a non- reactive bowl and leave to cool.
  • Put scoops of the ice cream into stemmed glasses and drizzle over the sauce. Arrange about 1 teaspoon of crystallized ginger on top of each dessert and serve immediately.



Ice cream

  • 2-litre vanilla ice cream
  • 4 teaspoon ground ginger

Tamarind sauce

  • 100 grams seedless raisins
  • 100 grams stoned dried dates
  • 5 tablespoon tamarind juice
  • 50 grams molasses sugar
  • 300 grams chopped crystallized ginger, to serve
