Preparation Method :

  • Mix the egg yolk, sugar, custard powder and ginger together in a bowl. 
  • Gradually add the ¾ cup of milk to form into a smooth cream.
  • Heat 1½ cups milk.
  • Stir the custard into the hot milk, then return the pan to the stove and gradually stir-cook until the custard has thickened. Remove from heat.
  • Whip the cream to soft peaks.
  • Whisk the egg white until stiff but not dry, then fold it together with the cream into the ginger-custard until evenly mixed.
  • Pour into freezer containers and freeze until firm.


  • 350 ml cream
  • 1 tablespoon ground ginger 
  • 500 ml milk
  • 1 tablespoon custard powder
  • 2 tablespoon castor sugar
  • 1 egg yolk
  • 1 egg white
