Preparation Method :

  • Grate the rind of 5 oranges very lightly and rub it in the sugar to impart its flavour.
  • Take a double boiler and place the sugar in with half the cream and allow to a boil until sugar is fully dissolved. Remove and keep aside to cool.
  • Take out the juice from the oranges and strain it.
  • Fold in the cream and add the juice to it.
  • Whip rest of the cream and fold it into the fruit mixture.
  • Pour into freezing trays and stir every 20 - 30 until it is half set. Then allow to freeze till fully set.
  • Scoop out and serve in glass dishes immediately.


  • 75 grams castor sugar
  • 150 ml thick cream
  • 12 oranges
