PEACH ICE CREAM WITH FRESH PEACHES

Preparation Time :
1 hour

Preparation Method :

  • Pour boiling water over 1 peach in a bowl, allow to stand for a minute or two. Drain.
  • Place peach in cold water. Remove skin and pit and mash.
  • Mix the peach pulp with cream, half of Grand Marnier and sugar in a blender. Blend until smooth and the sugar is dissolved.
  • Pour into ice cream tray and freeze. When semi-frozen take out and beat lightly.
  • Cover with a cling-film to prevent ice crystals from forming and put it back in the freezer to set.
  • An hour before serving, peel the other 2 peaches and cut into slices.
  • Put the peach slices in a bowl, cover with sugar syrup and add leftover Grand Marnier.
  • Arrange the peach slices in stem glasses. Serve with 2 scoops of ice cream and chopped pistachios.

INGREDIENTS

  • 75 grams sugar
  • 50 ml sugar syrup
  • 3 large, ripe peaches
  • 150 ml thick cream
  • 1 tablespoon Grand Marnier
  • 1 tablespoon chopped pistachios
