RICH MANGO ICE CREAM

Preparation Method :
- Heat the cream in a pan upto boiling point.
- Beat the egg yolks and sugar well and pour the hot cream over them.
- Then place it into a double boiler and cook over simmering till it coats the back of a spoon.
- Strain and cool.
- Add the mango puree to the custard mixture. Whip 2 cups of cream till it forms soft peaks and fold into the mango-custard mixture.
- Transfer to a freezer container and cover the top and allow to freeze until half set.
- Remove and whisk the contents until combined thoroughly and freeze until firm.
- Half an hour before serving, place the freezer container on the lower shelf of the fridge to help soften the ice cream slightly.
- Scoop out ice cream into ice cream cups and serve.

- 150 grams fresh mango puree
- 150 ml cream
- 140 ml thin cream
- 3 egg yolks
- 3 tablespoon castor sugar
