Preparation Method :

  • Slightly beat the egg yolks and add vanilla essence.
  • Cook sugar and cream in a double boiler and remove and strain.
  • Combine the yolks with the strained sugar mixture and whisk.
  • Stir-cook in a double boiler over simmering water till it coats the back of the spoon.
  • Remove from heat and add the butter cubes and mix.
  • Transfer it a shallow dish and freeze till it is half set.
  • Remove from the fridge and whisk once more.
  • Put it back in the freezer to set again. Serve with crushed caramel.


  • 500 ml / 1 lb / 3 cups thick cream
  • 150 grams / 6 oz / ¾ cup sugar
  • 8 egg yolks
  • 7 ml / 1½ teaspoon vanilla essence
  • 25 grams / 1 oz / ¼ cup unsalted butter - cut in cubes
