Preparation Method :

  • Beat the egg, egg yolks, sugar and vanilla essence together in a bowl.
  • Bring the milk to boiling point and remove from the stove.
  • Stir together the egg mixture and boiled milk in a bowl and strain it.
  • Stir-cook on a low flame till it coats the back of the spoon.
  • Remove and pour into a bowl and cool.
  • Whip the cream and fold into the custard.
  • Fold it in a freezing container, cover and keep it in the freezer till half-set.
  • Remove and whisk it well. Put it back in the freezer until firm.
  • Remove and serve with Hot Chocolate Fudge.


  • 75 grams / 3 oz / ½ cup caster sugar
  • 150 ml / 6 oz / 1½ cups thick cream
  • 10 ml / ½ oz / 2 teaspoon vanilla essence  
  • 150 ml / 6 oz / 1½ cups milk
  • 1 egg
  • 2 egg yolks
