Preparation Method :

  • Heat the milk to boiling point.
  • Beat the yolks and castor sugar till pale and fluffy.
  • Pour warm milk and mix.
  • Keep on a medium flame and stir-cook till it coats the back of a spoon.
  • Remove from flame and add vanilla essence, rum and walnuts and cool.
  • Whip the cream till soft peaks form and fold into the walnut mixture.
  • Fill the ice trays with the mixture and freeze till firm.
  • Cover with foil and chill till fully set.


  • 500 ml milk
  • 2 egg yolks
  • 150 grams caster sugar
  • 1 teaspoon vanilla essence
  • 150 grams chopped walnuts
  • 25 ml rum
  • 300 ml thick cream
