Preparation Method :

  • Mix the sugar and mangoes together thoroughly in a large pan.
  • Add the remaining ingredients except vinegar and cook on low flame till the sugar dissolves completely.
  • When the mangoes are soft, add malt vinegar. Cook for a few minutes till the syrup is quite thick.
  • Make sure not to over cook as the consistency will become thick when it cools. Store it in an airtight jar.


  • 1.5 kg raw green mangoes, peeled and sliced
  • 150 ml malt vinegar
  • 1.5 kg sugar
  • 25 grams aniseed
  • Red chilli powder and salt to taste
  • Dry red chillies to taste
