SCOTCH BEEF WITH DRIED FRUIT

Preparation Method :

  • Soak the prunes and apricots in cold water overnight. Drain, reserving the water. Season the beef with salt and pepper.
  • Melt the butter in a large saucepan over high heat. Brown the beef all over, 8-10 minutes.
  • Add the onions, apple, sugar, cloves, whiskey, and bay leaf and bring to a boil. Cover and simmer over low heat for 2 hours.
  • Add the prunes, apricots, and soaking liquid. Cook for 30 minutes. Season with salt and pepper. Slice the meat and transfer to a serving dish with the fruit.
  • Blend the flour with a little water. Stir into the cooking juices. Cook for 2 minutes, stirring constantly. Spoon over the meat. Garnish with the parsley and serve hot.

  • 500grams pitted prunes
  • 200 grams dried apricots
  • 2 kg beef silverside or brisket
  • Salt and freshly ground black pepper
  • 3 tablespoons butter
  • 3 onions, thinly sliced
  • 2 large apple, thinly sliced
  • 2 tablespoon brown sugar
  • 2 teaspoon crushed cloves
  • 150 ml whiskey
  • 2 bay leaf
  • 2 tablespoon all-purpose (plain) flour
  • 4 tablespoons finely chopped fresh parsley
