Still craving for new meat recipes? Then, you should try sirloin of beef lady jayne that matches to the preferences of the whole family. Every piece of meat is packed with delicious taste that truly fit to any occasions including daily servings.

Preparation Method :

  • Preheat the oven to Gas Mark 5/190°C/375°F.
  • Season the meat with salt and pepper.
  • Heat the beef dripping in a roasting tin and brown the meat evenly on all sides.
  • Remove from the tin and slice along the centre of the sirloin to form a pocket for the stuffing.
  • Place all the stuffing ingredients in a bowl and mix thoroughly.
  • Fill the cavity in the sirloin with the stuffing and place it back in the roasting tin.
  • Cover the sirloin with greased cooking foil and bake in the centre of the oven for 2 hours.
  • Baste the sirloin with the juices during the last 30 minutes.
  • Then remove the foil and cook uncovered for a further 30-40 minutes.
  • Remove from the oven, carefully place on a large serving dish and slice the meat.
  • Garnish with fresh basil and serve.


  • 1.3 kgs sirloin of beef, trimmed 
  • Salt and freshly ground black pepper (to taste) 
  • 50 grams beef dripping 
  • A few sprigs of fresh basil

For the stuffing

  • 250 grams toasted breadcrumbs 
  • 500 grams apples, peeled, cored and chopped 
  • 75 grams chopped cashew nuts
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons clear honey, warmed
  • 3 tablespoons brandy
  • 2 tablespoons dry sherry
