BEEF CASSEROLE WITH YOUNG TURNIPS & CIDER

The beef casserole with young turnips and cider is combined with excellent ingredients like rump steak, Worcester sauce, French mustard, dry cider, beef stock, white turnips and other seasonings. With its young cider and turnips, you can never resist its every piece.

Preparation Method :

  • Preheat the oven to Gas Mark 4/180°C/350°F.
  • Heat the oil in a large frying pan. Coat the meat in the seasoned flour and brown it all over, cook it for about 6 minutes.
  • Lift it into a large deep casserole.
  • Slowly fry the shallots, crushed garlic and turnips in the steak juices. Add honey, beef stock, Worcester sauce, mustard and cider.
  • Season it with salt and pepper.
  • Pour the sauce over the steak, cover the casserole with a lid or cooking foil, place in the centre of the oven and cook for 2 hours until the meat is very tender.
  • Thicken with a little flour if required, and serve.

INGREDIENTS

  • 3 tablespoons cooking oil
  • 1 kg rump steak (fat and gristle removed), diced
  • 75 grams flour, seasoned
  • 450 grams shallots, peeled
  • 2 cloves garlic, crushed with a little olive oil
  • 650 grams young white turnips, peeled and halved
  • 1 tablespoon clear honey
  • 250 ml Basic Beef Stock
  • 2 tablespoons Worcester sauce
  • 3 tablespoons French mustard
  • 150 ml strong dry cider
  • Salt and freshly ground black pepper (to taste)
  • A little plain flour (optional)
