Preparation Method :

  • Take a piece of fat from the lamb and rub over the base of a heavy pan.
  • Add the lamb and cook gently until the meat is browned on all sides.
  • Add the onions and garlic and continue cooking gently for 5 minutes, stirring occasionally.
  • Add the carrots, peppers, tomato juice and salt and pepper to taste, then cover and simmer for 1 hour.
  • Add the potatoes and beans to the pan, cover and continue simmering for 30 minutes.
  • Taste and adjust the seasoning.
  • Serve hot with a seasonal green vegetable. 


  • 1½ kg boned leg or shoulder of lamb, trimmed of fat and cut into cubes
  • 4 onions, peeled and chopped
  • 2 clove garlic, peeled and crushed
  • 4 carrots, peeled and sliced
  • 4 green peppers, cored, deseeded and chopped
  • 500 ml tomato juice
  • Salt
  • Freshly ground black pepper
  • 4 potatoes, peeled and diced
  • 500 grams French beans, diced
