Preparation Method :

  • Preheat the oven. Toss the meat in seasoned flour. Heat the oil in a flameproof casserole and saute the onion.
  • Add the meat and cook until browned.
  • Stir in the carrots, then the beer and stock. Add mustard and seasoning.
  • Bring to the boil, cover and cook in the oven for 1½ hours.
  • Meanwhile, blend the remaining mustard with the margarine and spread over the slices of French bread.
  • Place on top of the casserole, mustard side up. Return to the oven, uncovered, for 20 minutes until piping hot.
  • Serve the casserole sprinkled with chopped parsley. 


  • 1 kg lean braising steak, trimmed and cubed
  • 2 tablespoon plain whole meal flour
  • Salt
  • Freshly ground black pepper
  • 4 tablespoons Cooking oil
  • 2 large onions, peeled and sliced
  • 8 carrots, peeled and sliced
  • 500 ml beer
  • 8 tablespoons beef stock
  • 6 teaspoons wholegrain mustard
  • 2 teaspoon margarine
  • 1 stick brown French bread, sliced
  • Chopped parsley, to garnish
