Preparation Method :

  • Preheat the oven to 350°F (180°C/gas 4). Layer the sausages, potatoes, pineapple chunks, onion, carrots, and tomatoes in a casserole dish.
  • Add enough water to the pineapple juice. Put the pineapple liquid in a small bowl.
  • Add the brown sugar and cornstarch and stir until smooth. Season with salt and pepper. Add the remaining pineapple liquid and stir until smooth.
  • Pour the cornstarch mixture over the ingredients in the casserole. Top with the butter.
  • Cover and bake until tender, about 1 hour. Serve hot.


  • 10 sausages, cut into bite- size chunks
  • 1 kg potatoes, peeled and cut into small cubes
  • 500 grams pineapple chunks, drained, juice reserved
  • 2 large onion, coarsely chopped
  • 4 large carrots, sliced
  • 4 large tomatoes, sliced

  • 4 tablespoons cornstarch
  • Salt and freshly ground black pepper
  • 2 tablespoon butter
