SIRLOIN OF BEEF WITH PORT & CORIANDER

Sirloin of Beef with Pork and Coriander – what an ideal mixture! This dish is rich with sirloin steaks, tomato puree, chicken stock and other flavorings. With its perfect seasonings, the dish appears more appetizing and yummy suited for your regular meals.

2 hours 40 minutes

Preparation Method :

  • Preheat the oven to Gas Mark 3/170°C/325°F.
  • Heat the oil in a large frying pan.
  • Coat the steaks in the seasoned and sifted flour and brown them all over, cook it for about 4 minutes. Lift them into a large deep casserole.
  • Slowly fry the mushrooms in the steak juices.
  • Add the chicken stock, port, coriander, mace and tomato puree.
  • Season it with salt and pepper.
  • Pour the port sauce over the steak, cover the casserole with a lid or cooking foil, place in the centre of the oven and cook for 2 hours until the meat is very tender.
  • Add fromage frais. Cook it for further 10-12 minutes, sprinkle with extra fresh coriander, and serve.

INGREDIENTS

  • 3 tablespoons Cooking oil
  • 50 grams flour, seasoned and sifted
  • 225 grams sirloin steaks, fat and gristle removed
  • 500 grams button mushrooms, wiped and roughly chopped
  • 250 ml chicken stock
  • 6 tablespoons port
  • 2 tablespoons chopped fresh coriander
  • A pinch of mace
  • 1 tablespoon tomato puree
  • Salt and freshly ground black pepper (to taste)
  • 150 ml fromage frais
  • Extra chopped fresh coriander
