SPICED BEEF CASSEROLE WITH NUTS & GRAPES

This is an excellent meat recipe for all! This dish is packed with braising steak, seedless grapes, and other special seasonings. With its combined nuts and grapes, the dish looks more luscious and tastier.

10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the olive oil in a large saucepan and fry the meat, onions and carrots for about 6-7 minutes, until browned.
  • Add the remaining ingredients (except the grapes) and simmer on a low heat for 3-4 hours until the meat is very tender.
  • Add the sliced black grapes just before serving.

INGREDIENTS

  • 3 tablespoons olive oil
  • 750 grams braising steak cut into 2cm cubes
  • 10 shallots or pickling onions, peeled
  • 3 carrots, peeled and chopped
  • 50-75grams of ready-cooked chestnuts, peeled and sliced
  • 50 grams flaked almonds, toasted
  • ½ freshly grated nutmeg
  • 3 teaspoons ground cinnamon
  • 275 ml red wine
  • 275 ml Basic Beef Stock
  • 175 ml red wine vinegar
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon chopped fresh flat leaf parsley
  • 1 tablespoon chopped fresh thyme
  • Sea salt and freshly ground black pepper (to taste)
  • Grated rind of 1 orange
  • 1 tablespoon dark muscovado sugar
  • 100 grams black seedless grapes, sliced
