MILANESE FRIED VEAL CHOPS

Preparation Method :

  • Lightly pound the veal with a meat tenderizer so that it is of even thickness. Dip in the eggs and then in the bread crumbs. Press down well so that the bread crumbs stick all over.
  • Heat the butter and oil in a large frying pan over medium-high heat. Add the chops and fry until a thick golden crust forms, 5 minutes.
  • Turn and cook in the same way on the other side. If the chops don't all fit in the pan in a single layer, cook them in two pans or in two batches.
  • Drain well on paper towels and season with salt. Garnish with the lemon wedges and serve hot.

  • 6 large veal chops
  • 4 large eggs, lightly beaten
  • 400 grams fine dry bread crumbs
  • 150 grams butter
  • 2 tablespoon sesame oil
  • Salt to taste
  • Lemon wedges, to garnish
