Preparation Method :

  • Cut steak into 2 inch long strips and place in a bowl with salt, baking soda, water, egg white and cornflour.
  • Mix well to combine, cover and refrigerate at least for an hour.
  • Heat 1 tablespoon oil in a frying pan and stir fry beef until well browned. Remove from pan and set aside.
  • Add onion and green pepper and stir fry until golden. Remove and set aside with beef.
  • Drain black beans, crush to a paste with the garlic. Heat a little more oil in the pan, add paste and stir fry for 1 minute.
  • Return beef and onion mixture to pan and stir well to combine.
  • To make sauce combine soy sauce, sherry with sugar, cornflour and water, pour into pan and cook for 2 more minutes.
  • Season to taste with salt and black pepper. Serve with rice.


  • 1 tablespoon salted black beans, soaked for 1 hour
  • ½ teaspoon baking soda
  • 1 onion, chopped
  • 1 green pepper, sliced
  • 2 cloves garlic, crushed
  • 50 ml water
  • 500 grams lean rump steak
  • 1 egg white
  • 1 tablespoon cornflour
  • Cooking oil
  • Freshly ground black pepper and Salt, to taste
  • Soy and Sherry Sauce
  • 1 teaspoon cornflour
  • 50 ml water
  • 2 teaspoon soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon dry sherry
