CATALAN BEEF STEW

This delicious delicacy is very easy to prepare and no hassle at all. You can try this out on your own, and you can prepare it with your family and friends, and surely it will definitely keep them from coming back. Preparation Method :

  • Brown the meat on all sides in the oil in a frying pan, and then drain on kitchen paper towels.
  • Lightly fry the bacon, onion and carrots in the same pan, drain and transfer to an ovenproof pot or casserole.
  • Add the mushrooms, garlic, herbs and nutmeg, and place the meat on top.
  • Mix together the tomatoes, treacle, cider and salt and pepper to taste and pour over the joint.
  • Cook in a hot oven for 10 minutes and then turn the oven down to moderate and cook for a further 1 hours or until the meat is tender.
  • Lift the meat on to a warmed serving dish; leave whole or cut into thick slices.
  • Quickly sieve the sauce or blend in a blender or food processor.
  • Reheat in a separate pan, adjusting consistency and seasoning if necessary.
  • Serve hot.

INGREDIENTS

  • 2 kg topside of beef
  • Cooking oil for frying
  • 8 rashers lean bacon, derinded and chopped
  • 2 medium onion, peeled and sliced
  • 4 carrots, peeled and sliced
  • 100 grams mushrooms, sliced
  • 2 clove garlic, peeled and crushed
  • Pinch each dried parsley, dried thyme and dried
  • Rosemary grated nutmeg
  • 2 bay leaves
  • 500 grams tomatoes
  • 2 teaspoon black treacle
  • 500 ml cider
  • Salt
  • Freshly ground black pepper
