Preparation Method :

  • Spice Paste Put all the spice paste ingredients in a large mortar and pestle or food processor and grind to make a smooth paste.
  • Curry Place a saucepan over medium heat. Add the spice paste and cook until fragrant, about 30 seconds. Add the beef, lemongrass, and cinnamon and sauté until coated.
  • Add the coconut milk and sugar, and bring to a boil. Simmer on low heat, uncovered, until the liquid has evaporated, leaving the meat to fry in the oil that remains, about 2 hours.
  • Remove the lemongrass and cinnamon and season with salt. Serve hot with rice.


Spice Paste

  • 100 grams shredded coconut, lightly toasted
  • 6 shallots, coarsely chopped
  • 8 long red chillis, seeded and finely chopped
  • 4 cloves garlic, chopped
  • 4 teaspoons finely grated ginger
  • 4 teaspoons ground coriander
  • 4 teaspoons ground cumin
  • 2 teaspoon ground turmeric
  • 5 tablespoons sesame oil


  • 2 kg braising steak, cut into small chunks
  • 4 stalks lemongrass
  • 2 cinnamon stick
  • 2 liter canned coconut milk
  • 2 tablespoon brown sugar
  • Salt to taste
  • Freshly cooked basmati rice
