MALAYAN CURRY

Try preparing this astonishing dish on your special day. It is pretty much sure that your special guests will enjoy your party with this meal. They won’t forget this remarkable and special day of yours. Your guests will surely thank you for inviting them on your big day.

1 hour 25 minutes

Preparation Method :

  • Heat the oil in a pan and fry the meat until browned all over. Add the onion and continue to cook for 2 minutes.
  • Stir in the curry powder, cinnamon, cayenne pepper and salt and pepper to taste. Continue to cook for 1 minute.
  • Add the stock and apple and bring to the boil, cover and simmer for 1 hour. Stir occasionally and add more liquid if necessary.
  • Cook the rice in plenty of boiling salted water for 15 minutes or until tender. Drain and rinse.
  • Arrange the rice around the edge of a warmed serving dish and spoon the curry into the centre. Sprinkle with coconut and garnish with halved eggs.
  • Serve immediately. 

INGREDIENTS

  • 2 tablespoon Cooking oil
  • 600 grams boneless lamb, cut into cubes
  • 2 onion, chopped
  • 4 teaspoons curry powder
  • 1 teaspoon ground cinnamon
  • Pinch of cayenne pepper 
  • Salt and freshly ground pepper
  • 400 ml stock 
  • 2 dessert apple, peeled, cored and chopped 
  • 300 grams long grain rice
  • 2 tablespoon desiccated coconut
  • 4 eggs, hard-boiled, to garnish
