CORDON BLEU ESCALOPES (CUTLETS)

Cordon blue escalopes, sounds interesting and its taste like, it’s everything because it’s flavourful and you will taste the freshness of the dish and it’s refreshing to your mouth. It prepares with lemon wedges, butter, and breadcrumbs. This dish is truly great and you can try it now.

Preparation Method :

  • Put the veal between sheets of greaseproof (wax) paper and beat with a rolling pin until they are very thin.
  • Cut each one in two and on one half of each escalope place a slice of ham and slice of cheese. Top with remaining half escalopes and secure on each side with wooden cocktail sticks (toothpicks).
  • Coat each veal "sandwich" with seasoned flour, dip in beaten egg and then in crumbs, firming them on with the flat of the hand.
  • Wrap in waxed paper or plastic film and chill for 30 minutes.
  • Heat the oil and butter in a large frying pan (skillet) and when the foam subsides, add the veal and fry for 5 to 7 minutes on each side until crisp and golden.
  • Remove the cocktail sticks (toothpicks) and serve immediately with lemon wedges, croquette potatoes and a crisp green salad.

INGREDIENTS

  • 200 grams thin veal escalopes
  • 4 slices smoked ham
  • 4 slices Gruyere cheese seasoned flour
  • 2 eggs, beaten
  • Dried breadcrumbs for coating
  • 4 tablespoons Cooking oil
  • 100 grams butter
  • Lemon wedges
