Preparation Method :

  • Combine lamb with the onion mixture and yogurt in medium bowl, cover and refrigerate for several hours.
  • Thread lamb onto skewers. Grill for about 3-5 minutes or until golden brown and tender. Serve with curried onions and rice.
  • Curried Onions Heat ghee in saucepan; cook onions, stirring for about 3-5 minutes or until onions are soft.
  • Stir in all the remaining ingredients with water for about a minute or until mixture boils and thickens slightly.


  • 1.2 kg leg of lamb, boned, remove excess fat; cut into cubes
  • 220 grams plain yogurt

Ground to Paste

  • 145 grams brown onion, chopped
  • 1 teaspoon black poppy seeds
  • 2 teaspoons ground ginger
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon ground turmeric
  • Salt, to taste
  • 1 teaspoon garam masala

Curried Onions

  • 245 grams brown onions, chopped
  • ½ teaspoon paprika
  • ½ teaspoon ground cardamom
  • 2 tablespoon ghee
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon garam masala
