Preparation Method :

  • Curl each chop into a round shape. Season well with salt and pepper. Wrap a strip of bacon around each and secure with a wood cocktail stick.
  • Heat the butter in a flameproof casserole and gently brown the chops for about 4 minutes on each side.
  • Blanch the lettuce leaves, one at a time, by dipping into boiling water for 3 seconds, then into cold water. Dry gently with kitchen paper towels.
  • Remove the cocktail sticks (toothpicks) and wrap each chop in two lettuce leaves.
  • Replace in the casserole seam-side down, pour the chicken stock over, cover tightly, and cook in a preheated moderately hot oven (200°C/400°F, Gas Mark 6) for 20 minutes.
  • Place the chops on a warmed serving plate and stir the cream into the liquid left in the casserole.
  • Bring to boiling point, taste for seasoning, and spoon over the chops.
  • Serve with Lentils with Parsley Butter.


  • 4 lamb loin chops, cut double thickness and boned
