PERUVIAN LAMB

Peruvian lamb, sounds good and it have a great taste! It can serve in different occasions; everyone will love this food because of tenderness and juiciness of itself. You will feel the satisfaction of this food. It cooks less than an hour and you should try this at home! Your family and friends should taste it, and they will never forget you!

Preparation Method :

  • Season the lamb well with salt and pepper. Place the vegetables in a greased ovenproof dish, put the lamb on top, and cook in a preheated moderately hot oven (200°C/400°F, Gas Mark 6) for 30 minutes.
  • Mix together the stock, coffee and sugar and pour over the lamb. Reduce the heat to moderate (180°C/350°F, Gas Mark 4) and continue roasting, basting frequently for 1 hour.
  • Transfer the lamb to a warm plate. Skim off any fat, then rub the contents of the roasting pan through a sieve or puree in a blender.
  • Reheat the sauce to boiling point, stir in the cream, and serve in a sauce boat with the lamb, roast potatoes and Spiced Green Beans.

  • 3 kg shoulder of lamb
  • Salt and freshly ground pepper
  • 4 onions, sliced
  • 2 carrot, sliced
  • 250 ml hot beef stock
  • 500 ml hot strong black coffee 
  • 2 tablespoon sugar
  • 250 ml single cream
