Preparation Method :

  • Season the meat well. Heat the oil in a frying pan, brown the meat and saute the onion and garlic until transparent.
  • Drain and transfer to an ovenproof dish or casserole. Mix together the soy sauce, sherry, sugar and stock.
  • Pour over the meat and mix well. Add the ginger and bay leaves.
  • Cook in a preheated moderate oven for 1 ½ to 2 hours, or until the meat is tender. About 30 minutes before serving, stir in the corn flour, blended with 2 tablespoons cold water.
  • Just before serving, remove the ginger and bay leaves from the casserole, and sprinkle with red pepper.
  • Serve with plain boiled rice.


  • 2 kg boned shoulder of lamb, cubed
  • Salt
  • Freshly ground black pepper
  • 4 tablespoons Cooking oil
  • 2 onion, peeled and chopped
  • 2 clove garlic, peeled and crushed
  • 6 tablespoons soy sauce
  • 8 tablespoons dry sherry
  • 4 teaspoons sugar
  • 200 ml brown stock
  • 4 slices root ginger
  • 4 bay leaves
  • 4 teaspoons corn flour
  • 2 small red pepper, cored, deseeded and cut into strips
