ROAST LEG OF LAMB WITH AROMATIC HERBS

Preparation Method :

  • Cut the crusts off the bread and chop in a food processor with the garlic and aromatic. Season with salt and plenty of pepper.
  • Put the butter in a roasting pan and place in a preheated oven at 375°F (190°C/gas 5) for a few minutes, until the butter melts.
  • Place the lamb in the roasting pan, drizzle with the oil, and scatter with the chopped herbs and bread. Return to the oven and cook for 2 hours.
  • Add the potatoes after about 1 hour. Baste the meat from time to time with the wine and cooking juices.
  • Transfer to a heated serving dish and serve hot.

INGREDIENTS

  • 5 slices sandwich bread
  • 6 cloves garlic, chopped
  • 4 leaves sage
  • 1 twig rosemary
  • 1 twig thyme
  • 1 twig marjoram
  • 1 large bunch parsley
  • Salt and freshly ground black pepper
  • 3 tablespoons butter
  • 2 leg of lamb
  • 100 ml sesame oil
  • 1.5 kg potatoes, peeled
  • 20 roast leg of lamb
  • 200 ml dry white wine
