AVOCADO POPOVERS WITH HAM

Preparation Method :

  • Steam the lettuce leaves over boiling water for 15 to 20 seconds. Refresh in ice-cold water.
  • Mix the avocado, lemon juice, ham and spring onion in a bowl. Season with salt and pepper.
  • Divide the avocado mixture between each lettuce leaf and wrap tightly.
  • Lay side by side in a steamer. Cover with a tight-fitting lid and steam over boiling water for 5 minutes.
  • Meanwhile, make the sauce. Place the egg yolks and lemon juice in a blender or food processor.
  • Season well with salt and pepper and blend for a few seconds.
  • With the machine running, gradually add the melted margarine until the sauce is thick and light.
  • Taste and adjust the seasoning. Flood the base of 4 individual plates with the lemon sauce.
  • Top with the hot avocado popovers and garnish with the thin strips of blanched lemon rind.
  • Serve immediately.

INGREDIENTS

  • 16 lettuce leaves
  • 2 large avocado, stoned, peeled and cut into strips
  • Juice of 2 lemons
  • 4 slices lean smoked ham, cut into strips
  • Bunch of spring onions, trimmed and finely sliced
  • Salt
  • Freshly ground black pepper
  • Pared rind of 1 lemon, cut into thin strips and blanched, to garnish

Lemon sauce

  • 6 egg yolks
  • 6 tablespoons lemon juice
  • Salt
  • Freshly ground black pepper
  • 200 grams margarine, melted
