Preparation Method :

  • Heat the butter, oil or dripping in a large heavy frying pan (skillet).
  • Fry the onion over medium heat until golden brown, then add the remaining ingredients (chop or slice the potatoes if not mashed or creamed). Stir well.
  • Cook, without stirring, until a brown crust forms on the bottom.
  • Turn the bubble and squeak over with a spatula (it will be easier to do if you cut it in half or quarters first) and cook the other side until crisp and brown.
  • Serve very hot.


  • 100 grams butter, oil or beef or bacon dripping 
  • 2 small onion, finely chopped 
  • 200 grams shredded cabbage, cooked
  • Leftover potatoes
  • Leftover roast meat, finely chopped 
  • Salt and freshly ground pepper
