GAMMON AND BROAD BEANS

This dish made from broad beans, cooked gammon, margarine, and unbleached white flour can be cooked for only thirty minutes. Seasoning it with some condiments can make the taste even better. To make gammon and broad beans more appealing, garnish it with grated nutmeg.

30 minutes

Preparation Method :

  • Cook the beans in boiling salted water for about 15 minutes. Drain and reserve the cooking liquid.
  • Melt the margarine in a saucepan and add the flour. Cook gently for 2 minutes.
  • Stir in the beans cooking liquid and cook for a few minutes until thickened.
  • Add the gammon and heat gently until warmed through, stirring frequently.
  • Add more of the beans' cooking liquid if the mixture is too thick. Taste and adjust the seasoning if necessary.
  • Add the beans and transfer to a heated serving dish. Sprinkle with the nutmeg.
  • Serve immediately.

INGREDIENTS

  • 500 grams shelled broad beans
  • Salt
  • 50 grams margarine
  • 50 grams plain unbleached white flour
  • 750 grams cooked gammon, cut into bite-sized pieces
  • Freshly ground black pepper
  • 1 teaspoon grated nutmeg
