Serves :

Preparation Time :
30 minutes

Cooking Time :
1 hour 30 minutes

Preparation Method :

  • Mix the beef with the egg, sausage, nutmeg, bread, garlic, and parsley in a bowl. Season with salt and pepper.
  • Shape the mixture into a meat loaf. Put the flour in a large dish and carefully roll the meat loaf in it.
  • Heat the oil in a large, heavy-bottomed pan over medium heat and carefully brown the meat loaf all over, about 10 minutes.
  • Use a wooden fork and spatula when turning, taking care that the loaf doesn't crumble or break up. Drain the meat loaf of the cooking oil and set aside.
  • Heat the butter and the remaining oil in a sauté pan. Add the onion, carrot, and celery and sauté for 5 minutes.
  • Add the tomatoes and simmer for 5 minutes. Return the meat loaf to the pan and season with salt and pepper. Partially cover the pan and simmer over low heat for about 1 hour.
  • Stir frequently, so that the meat loaf does not stick to the bottom. If the sauce becomes too dense, add some of the stock.
  • Set aside to cool. Slice the tepid meat loaf and arrange on a serving dish. Heat the sauce just before serving and pour over the slices. Serve with the garlic mash.
