SAUTÉED CALF LIVER WITH FRESH SAGE

10 minutes

Preparation Method :

  • Lightly flour the liver and set aside on a plate.
  • Heat the oil in a large, heavy-bottomed pan and add the garlic and sage. Sauté over medium-high heat for 3 minutes, then add the liver.
  • Cook until well-browned on both sides, 10 minutes. Serve hot with the mashed potatoes and green salad.

INGREDIENTS

  • 750 grams calf liver, sliced
  • 4 heaped tablespoons all- purpose (plain) flour
  • 4 tablespoons sesame oil
  • 4 cloves garlic, finely chopped
  • 15 leaves fresh sage
  • Salt and freshly ground black pepper
  • Mashed potatoes, to serve
  • Green salad, to serve
