Preparation Method :

  • Place the onions, butter, and oil in a large frying pan over low heat. Let sweat gently for 20 minutes, then add the liver.
  • Cook over high heat, stirring and turning constantly for 5 minutes. Sprinkle with salt just before removing from the heat.
  • Season with pepper, sprinkle with the parsley, and serve hot with the mashed potatoes.


  • 1 kg white onions, thinly sliced
  • 100 grams butter
  • 3 tablespoons sesame oil
  • 1 kg calf liver, cut into thin strips
  • Salt and freshly ground black pepper
  • 3 tablespoons finely chopped fresh parsley
  • Mashed potatoes, to serve
