TOURNEDOS ROSSINI

The tournedos Rossini is cooked with delicious ingredients like butter, white bread, marsala, beef stock, pate and other extra elements. Its cooking procedures are extremely easy and fast. This menu is best fitted for any occasions and you will awfully enjoy its tasty beef.

Cooking Time :
45 minutes

Preparation Method :

  • Trim the steaks and season them well. Place them on the grill or in a greased frying pan and cook them as per your liking.
  • Trim the slices of bread into rounds.
  • Melt butter in another pan with the oil and fry the croutons until they turn to golden brown.
  • Place them on a serving dish with a serviette to dram off the excess butter.
  • Add the Marsala to the used pan for the croutons. Bring it to the boil, then add the stock and the Espagnole Sauce.
  • Boil it then let it simmer for 5 minutes until it thickens.
  • Season it with salt and pepper.
  • Check the steaks or turn them over.
  • Remove them from the pan when cooked and keep them warm.
  • Add the remaining butter to the pan and fry the pate slices for a minute on each side.
  • Serve, place each tournedos on a crouton then top with a pate slice , pour a little sauce over it and serve the rest in a sauceboat.

INGREDIENTS

  • 220 grams tournedos (filet mignon)
  • Freshly ground black pepper and Salt
  • 4 thick slices white bread
  • 75 grams butter
  • 1 tablespoon cooking oil
  • Half a glass of Marsala
  • 150 ml Basic Beef Stock
  • 150 ml Espagnole Sauce (opposite)
  • 4 slices pate
