BACON, EGG & VEGGIE PIE

Preparation Method :

  • Preheat the oven to 400°F (200°C/gas 6). Heat the oil in a large frying pan over medium heat. Sauté the onion until softened, 5 minutes. Add the bacon and sauté until crisp, 5 minutes.
  • Cook the potatoes in boiling water for 5 minutes. Drain. Combine the potatoes and the onion and bacon mixture in a medium roasting pan lined with baking paper.
  • Top with the tomatoes, peas, and parsley. Whisk the eggs and cream and season with salt and pepper. Pour into the pan.
  • Bake for 20 minutes until just set and golden. Lift out of the pan using the baking paper and serve hot.

INGREDIENTS

  • 2 tablespoon sesame oil
  • 2 large onion, sliced 6 thick slices bacon, rinds removed
  • 750 grams new potatoes, halved
  • 25 cherry tomatoes, halved
  • 200 grams frozen peas
  • 4 tablespoons coarsely chopped fresh parsley
  • 10 large eggs
  • 150 ml heavy (double) cream
  • Salt and freshly ground black pepper
