The beef and game pie is cooked with butter, berries, flour, maijoram, milk and other added ingredients. Every piece of the meat is flavored with perfect components and thus promotes excellent meal time experiences.

Preparation Method :

  • Put fat in a large saucepan and heat it gently.
  • Add beef and game cook for 10 minutes, till the juices extract and browning the meat.
  • Add mushrooms, shallots and garlic, cook it for further 5-10 minutes.
  • Sprinkle with the flour and cook for 5 minutes.
  • Add the wine and beef stock slowly. Add rest of the filling ingredients, allow to stand for 6 hours.

To make the pastry

  • Sift the flour into a mixing bowl, add suet, salt and pepper. Blend in the butter lightly.
  • When the mixture resembles fine breadcrumbs, add water and egg, bind it into a stiff dough.
  • Knead the dough lightly atleast for 5-10 minutes, then cover and
  • Leave it in a warm place.
  • Bring beef and game mixture to the boil and then simmer, reducing the stock by half and cooking for 30 minutes.
  • Place the beef and game mixture in a 1.2 liter pie dish.
  • Roll out the pastry and cover the pie dish, seal it all round.
  • Brush with a little milk and bake in the centre of the oven for 50 minutes at Gas Mark 4/180°C/350°F.


  • 50 grams of  butter
  • 50 grams dripping or lard
  • 450 grams fat and gristle removed sirloin steak  , cut into 2.5cm cubes
  • 700 grams mixed game meat, consisting of 250 grams gristle and all fat removed diced  haunch of venison, rabbit and pheasant  
  • 250 grams of button mushrooms, wiped
  • 250 grams shallots, peeled
  • 2 cloves garlic, peeled and chopped
  • 3 tablespoons seasoned plain flour
  • 275 ml claret
  • 275 ml Rich Beef Stock
  • 1 onion, peeled and chopped
  • 8 juniper berries
  • A pinch of allspice
  • A pinch of maijoram
  • 1 teaspoon salt
  • Freshly ground black pepper

For the pastry 

  • 200 grams plain flour
  • 50 grams shredded beef suet
  • A pinch of salt
  • Freshly ground black pepper
  • 75 grams unsalted softened butter
  • 1 egg yolk, blended with 4 tablespoons cold water
  • A little milk
